This next roaster has a special place in my heart. I lived in Chicago for six years, mostly in the Wicker Park, Logan Square area. Dark Matter coffee, and Star Lounge in particular, was a constant presence in my life, always offering a cozy study space, stimulating art and excellent coffee.
The first roast I tried is called "Fuego":
The taste of this coffee is unique. It has almost no fruity acidity, but it has a peppery, spicy kind of note. Heavy chocolate undertones and no lingering bitterness at all. It's a complex and delicious cup I would have over and over again.
Eyes of Orko has a darker edge, a little bitterness and chocolatey nutty notes. A pretty good medium roast.
